1 1/2 cups finely chopped fresh spinach
2 tablespoons basil pesto, or to taste
4 skinless, boneless chicken breast halves
2 tablespoons grated Parmesan cheese (optional)

Directions:

• Heat oven to 375 degrees
• Mix the spinach and pesto together in a bowl; spread half the mixture into the bottom of a glass baking dish. Place the chicken breasts onto the spinach mixture; top with the rest of the mixture. Cover the dish with aluminum foil.
• Bake until chicken is no longer pink in the center and the juices run clear, about 30 minutes. Uncover and sprinkle the Parmesan cheese. Return to the oven and bake until the cheese has begun to melt and brown, about 15 minutes.

Container plants are ideal for balcony gardening

Vegetables like peppers & tomatoes work well, as do herbs like rosemary, basil, cilantro & thyme.
A few annual plants that can be container grown are marigold, begonia, impatiens, snapdragon, and zinnia.

Container gardening supplies are available at nurseries and garden centers. The containers are usually made of fiber glass, ceramic or metal, and the width or container mouth decides which plant can be grown. Those with wider mouth can facilitate evaporation, and those with narrow mouth can retain water. Brown-eyed susans and petunias are great container plants that can be excellent patio decors.

Safety comes first

For the safety of our residents, NO Gas or Charcoal Grills are allowed on the balcony at The Timbers. It’s a fire hazard. Please feel free to use the community grills in our common areas.

We want to share some very helpful information:

• Fire needs 3 things to “live” — heat, oxygen, and food. The food could be grease, oil, carpet, or almost anything. Take away the oxygen and the fire can’t live. • If you have a kitchen fire, baking soda works well to put it out. Even just putting a lid on it will smother it.
• Never pour water on a grease fire, it will splatter the grease up the wall and now your cabinets are on fire!
• By far the most important thing to do in case of fire is CALL 911!
